Clean Eating nachos
When I started my new program, 80 Day Obsession, I knew I was going to have to find ways to make my favorite meals but meal plan approved....and we all know 80 days is too long to go without tacos!
So week 2 I embarked on figuring out how to make delicious, 80 Day Obsession approved, nachos...and they are everything!
The other amazing thing....almost all of this is prepped ahead of time so I can just heat and go!
So to start I made the taco meat with a Homemade Taco Seasoning.
Ingredients:
- 2 Tbsp. chili powder
- 2 tsp. ground cumin
- 1 ½ tsp. garlic powder
- ½ tsp. onion powder
- 1 tsp. dried oregano
- ¼ tsp. paprika
- ¼-½ tsp. cayenne pepper (optional)
Directions:
Mix all ingredients together in a small bowl and stire. Store in a cool, dry place for up to 6 months.
To Prepare Taco Meat:
- Add 1 lb. ground beef/bison/turkey to a medium skillet over medium-high heat.
- Use a spatula to break up the meat as it cooks.
- When the meat is cooked through, sprinkle 1 ½ Tbsp. taco seasoning over meat. Add 2-3 Tbsp. water and stir to combine, adding more water as needed.
I prepare a big batch of this on the weekend and then have it ready to heat up during the week.
Next I prepare my Homemade Tortilla Chips:
Ingredients
- Corn Tortillas
- Extra Virgin Olive Oil
Directions
- Preheat oven to 400
- Cut corn tortillas into chips and lightly spray with EVOO
- Bake at 400F for 5 minutes flip and back for another minute (watch carefully as they will burn quickly)
Then to make your nachos I top my tortilla chips with my taco meat, fresh diced tomatoes, corn, and you can add cheese or guacamole! Oh and I added greek yogurt as my sour cream and it was to die for! I literally eat these every single day! Enjoy!
Containers:
- 2 small corn tortillas = 1 yellow
- Taco Meat and greek yogurt = 1 red
- Tomatoes/corn/lettuce = 1 green
- Cheese or avocado = 1 blue
